What Are Net Carbs and Do They Matter?
Net carbs are a subtraction rather than a property of food. Whether it is worth doing depends on what is being taken away, and why.

The short answer
Net carbs are total carbohydrate minus fibre and minus sugar alcohols. On a 2,061 kcal maintenance day the macro calculator on this site gives 251 g of carbohydrate and 29 g of fibre, so the net figure is 222 g. Nothing about the food changed; one line was subtracted from another.
The subtraction exists because fibre and most polyols are not fully absorbed, so they do not deliver the 4 kcal per gram that available carbohydrate does. Fibre is fermented in the colon instead, and sugar alcohols are partly absorbed and partly fermented.

Where the net carb figure comes from
Fibre resists digestion in the small intestine. It arrives in the colon largely intact and is fermented by bacteria into short-chain fatty acids, which the body does absorb but which are worth far less than 4 kcal per gram. Sugar alcohols follow a similar path, with most credited at about 2 kcal per gram on US labels and erythritol at roughly 0.2 because it passes through almost unchanged.
So the net figure is a calorie correction dressed up as a carbohydrate count. That is why a food can print a low net carb number and a long total carbohydrate line at the same time without either being wrong, and why the two numbers disagree most in bars, ice creams and anything reformulated.
What the labels are allowed to say
In the United States, total carbohydrate on a label already includes fibre, and net carbs is not a defined term: the figure is calculated by the maker rather than regulated. That leaves room for an optimistic polyol credit, so a bar can show a small net number while the calorie line is the more honest summary.
European labels print carbohydrate and fibre as separate lines and derive energy from fixed factors, so the subtraction is less necessary there. In both systems the calorie figure at the top of the panel already accounts for fibre and polyols, which means you rarely need to do the subtraction to know the energy.
Does counting net carbs help you lose weight?
Only to the extent that it changes what you eat. The energy difference between counting total and net carbohydrate is the fibre and polyol lines, which is a few dozen calories on a normal day: 29 g of fibre is roughly 58 kcal on the fermentation estimate.
The larger effect is behavioural. Counting net carbs tends to push people away from refined starch and sugar, and in a year-long randomised trial of low-fat against low-carbohydrate diets, both groups lost similar amounts of weight when adherence was similar. The diet that wins is usually the one that stays easy to follow.
Fibre is not free, and it earns its place
At about 2 kcal per gram, a high fibre day is not a rounding error: 40 g of fibre is roughly 80 kcal, and the food carrying it still counts. Treating fibre as free is a small but systematic way to undercount.
What fibre buys is worth more than those calories. It slows the rate at which a meal is eaten, raises fullness per calorie, and the guideline used across this site is 14 g per 1,000 kcal, which is about 29 g on a 2,061 kcal day. Most adults eat well under that, so the net carb debate usually matters less than simply eating more of it.
Who does not need net carbs at all
If you eat mostly whole foods, the subtraction adds work without changing a decision. Oats, potatoes, lentils and fruit all carry their fibre along with the carbohydrate, and the useful question is how many calories the plate holds, not which line to remove.
Two groups do get something from it: people following a very low carbohydrate plan, where the difference decides whether a food fits at all, and people managing a condition such as type 1 diabetes, where carbohydrate dosing is a clinical matter. For everyone else, total calories and protein are the numbers that move the outcome.
How to work out net carbs yourself
Read the panel in this order and the calculation takes a few seconds.
- Start with total carbohydrate, the line labels are obliged to print.
- Subtract fibre, which is listed underneath it on most labels.
- Subtract sugar alcohols, counting erythritol as about 0.2 kcal per gram rather than 2.
- Do not subtract anything else. Glycerol, allulose and resistant starch are handled differently and usually already reflected in the calorie figure.
- Check the calorie line. If your subtraction disagrees with it by more than a few percent, trust the calorie line.
Net carbs on training days
If you train hard, the carbohydrate line is the wrong one to trim. Session quality and glycogen refill depend on available carbohydrate, and a low net figure achieved by eating a lot of fibre will not fuel a heavy session any better than it fuels a rest day. A portion of rice and the same weight of lentils are not interchangeable an hour before training.
The practical version: count total carbohydrate on days when training matters, and use the net figure on packaged food, where the fibre and polyol credits decide whether something fits at all. Both habits are the same subtraction applied where it does something.

Polyols, resistant starch, glycerol and ordinary rounding all move the printed numbers, and labels carry a tolerance of up to about 20 percent. Check that the arithmetic lands in the right range rather than expecting an exact match.
